El objetivo de este estudio es caracterizar la participación de las mujeres en la cadena de valor del totopo en Santa María Xadani, Oaxaca, desde una perspectiva de género y sostenibilidad, en el marco de los sistemas agroalimentarios locales. A través de 69 entrevistas en profundidad realizadas cara a cara con mujeres productoras y vendedoras de totopo, se analizan sus prácticas en los eslabones de cultivo, provisión, transformación y comercialización. Los resultados revelan la importancia de los saberes tradicionales, la organización del trabajo en torno a la familia y el valor sociocultural incorporado en estas prácticas. Sin embargo, persisten desafíos como el acceso limitado a mercados más amplios, el desconocimiento de los consumidores finales y la sobrecarga de trabajo doméstico. El estudio concluye que los sistemas agroalimentarios sostenibles están profundamente arraigados en los conocimientos locales y en la agencia de las mujeres, y que apoyarlos es esencial para preservar el patrimonio alimentario, fortalecer las economías locales y avanzar en los objetivos de la Agenda 2030.
